The chances are that media-type has no effect on the output at all. Some implementations may do something with it in some circumstances, for example if they know that the stylesheet is generating the response to an HTTP request. The method attribute does strongly affect the content of the output. If both are used then they should be consistent, for example it wouldn't make much sense to set the media type to application/pdf if the output method is html; but if the method is "text" then there are many different media types that would make sense.
